Country Cooking – BLT with egg now that’s Comfort Food
When I think of comfort food a couple foods come to mind: homemade chicken noodle soup, eggs and toast, biscuits and gravy, BLT's, etc. If you are one of the rare people that grow your own tomatoes in the backyard, it's harvest time in Laramie (finally!)
This is a simple twist on the popular (BLT) bacon, lettuce and tomato sandwich. I hope no one needs a recipe for BLT's but if you do it's: you guessed it bacon, lettuce and tomato on two slices of toasted bread and mayonnaise. But this version you are using fresh homegrown tomatos, bacon from the butcher shop, a very taste bakery fresh bread and to top it off, a fried egg!
The egg make it have a nice dipping sauce built in and serve with homemade french fries and a pickle, you have my idea of comfort food.
Try it yourself and you will start putting eggs on other dishes. Another idea is eggs on cheeseburgers!
