The The Cav at Fort Sanders Unveils Terrific New Upgrades

Being a resident of Laramie for over 30 years, I have seen restaurants come and go, but the one consistently great place to go for dinner was the Cavalryman just south of town.

Now the restaurant is under new ownership and a new name, The Cav at Fort Sanders. The restaurant has been recently remodeled inside and out. Sure there are still deer and elk mounts on the wall but also a new chef in the back. As the saying goes "Beef it's not just for dinner." The Cav at Fort Sanders is not just for dinner either, they have a great lunch menu and it's the perfect place for a lunch date.

"Four months ago we hired Chef Dave Klyzek, a graduate of the Culinary Institute of America, and recently are very pleased with the addition of another Culinary Institute of America graduate, Sous Chef Carlos Osorio. We embrace our role as the premier historic Wyoming steakhouse with forty-one years of history on the site of old Fort Sanders. We have a passion for adding a culinary edge to the menu featuring fresh, local, organic ingredients whenever possible and of course always keeping it fun! Since Chef Dave’s arrival we are now baking our bread in house every day, all desserts are made from scratch and simply to die for.  "

The Cav strives to be “available” as they are open 356 days a year, serving lunch Monday through Saturday form 11am-2pm, a Sunday Brunch from 10am to 2pm, and of course dinner from 2pm to close seven days a week.

Food Philosophy - Starting with raw, natural, unprocessed ingredients whenever possible is what being a chef is all about. Cooking a great steak is all about respecting and honoring the ingredient, and working to bring out the best in it.

Other exciting changes at The Cav a Fort Sanders include growing their own vegetables in the summer season and upgrading the kitchen as well as remodeling most of the building.  I think they have kept the good parts from the "Old Cavalryman" and have improved the parts that needed to be updated. So if you have not been to the Cav at Fort Sanders lately your in for a real treat!
