The Calvaryman Steakhouse is hosting guest chef Mark DeNittis for a special "Taste of the West" dinner taking place on February 18, 2016 at 6 p.m.

DeNittis is a first generation Italian-American who founded the Rocky Mountain Institute of Meat and launched the Disassembly Dinner Series, which showcases head to tail butchery during a multi-course dinner.

Of DeNittis' visit, Calvaryman Steakhouse General Manager Justin Taylor says, "Chef Mark DeNittis brings a wealth of culinary experience and a long history of working with western beef. We are excited to have this opportunity to showcase Rocky Mountain butchery, regional beef, local wines, and produce with a nationally recognized chef."

The menu for the evening is as follows:

  • First Course: Thinly sliced Herb Beef Rib Spinals Carpaccio with au poive, Chilled Cowboy Bean Caviar, Baby Field Greens, Charred Lime Cilantro Scallion Oil and "Onion Musket Powder."
  • Second Course: Smokehouse+SaloonBeef Back Rib Sauerbraten or Flemish Carbonadde
  • Third Course: Jerky Beer Marinated Grilled Ribeye Heart Filet with a Savory Steel Cut Oat, Herb, and Mushroom Porridge Skillet Cake, Golden Beet Coulis, and 50 year old Balsamic.
  • Fourth Course: "Ladies and Eggshell Coffeepot Tiramisu"-Lady Fingers brushed with Cowboy Coffee Syrup, Citron Zabaglione, and Mascarpone.
